A Japanese restaurant is seeking a Head Chef.

Job Title: Head Chef
Working hours: 5 days/week
Exempt, Working hour is depending on business situation
Location: Manhattan (Near Noho Area), NY
Salary: $75K~(DOE)
90days of probation period (training period)
No insurance

【Duties】
・Purchases and maintains food items, consumables, dishes, and glasses, checking on food delivery, selecting vendor and suppliers.
・Constructing menus with new or existing culinary creations ensuring the variety and quality of the servings
・Controlling and directing the food preparation process and any other relative activities
・Approving and “polishing” dishes before they reach the customer
・Trains kitchen staff in food preparation, cooking, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
・Manages kitchen staff schedule, work hours, labor cost, conduct recurring, hiring interviews.
・Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
・Estimates and controls food cost and ensure all come within Company standards
・Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas. Ensures that kitchen staff follows and completes schedules as assigned
・Complies with federal, state, and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
・Follows facility, department, and Company safety policies and procedures to include occurrence reporting
・Operational duties and responsibilities are assigned, as needed accordingly.

【Qualifications】
・Must be a Food Protection Handler
・Ability in dividing responsibilities and monitoring progress
・Credential on health and safety training
・High school diploma or equivalent.
・Must have English fluency and be able to write in plain English.
・Excellent oral communication ability is required.
・Minimum 10 years work experience for full operation restaurant environment.
・Frequently lifts or carries up to 25 lbs.
・Occasionally lifts or carries up to 50 lbs.
・PC operational skills for MS Office.
・Demonstrates good organizational skills, multi-tasking skills, and positive interpersonal skills, as well as attention to detail.
・May have extended work hours required time to time, as business dictates, including weekends and holidays.
・Ability to work smoothly with management and staff members.
